Pork ribs 2 ways

I have the tendency to make pork ribs in a particular way. I usually think it’s always the same, but then changes the flavour each time that I marinate it because I change some ingredients on purpose. I can’t even follow my own recipes.

This time I had loads of pork ribs, so I decided to let them marinating until I wanted to cook them. I made two different marinades with two different garnishes. The amounts for the ingredients are a simple guide, so let me know if something went terribly wrong while cooking it and maybe we can find a way to fix it. I’m that kind of cook that never measures anything, not even dessert sometimes. I know, crazy.

Mediterranean ribs with an Asian touch

Ingredients
300gr pork ribs
1 tbsp coriander seeds
1 tsp cloves
4 tbsp Sriracha
1 orange (juiced)
3 bay leaves
Black pepper
A splash of Worcestershire sauce
1 garlic clove
A tiny bit of olive oil
Salt
1 big sweet potato

Method
Chop the garlic and mix with the spices and liquids. 
Add the meat and marinate for at least 30 minutes (I left it overnight)
Cook it in the oven at 180°C covered with tin foil for about 2 hours.
Meanwhile boil or roast the sweet potatoes. I usually stab them with a knife and cook them for around 5 minutes in the microwave, covered. And then place it with the roast in the oven, covering them with the jus from the meat after it’s been cooking for a while. 
Uncover and cook for as long as both meat and veggies need to get a little crispy, basting every 5-10 minutes.
You can serve with some nice bread with olive oil, cilantro and chilli.

Korean ribs with kimchi and rice

Ingredients

300 gr pork ribs
1 tsp gochujang paste
1 tbsp kimchi base paste
1 garlic clove
Some olive oil
Spring onions or scallions
1-2 tbsp soy sauce (depending on its salt content)
1 tbsp rice vinegar
Boiled white rice
Kimchi 

 

Method

Marinate the ribs the same way as above. Cook the same way.
Boil the rice according to package or your experience.
Serve with more fresh spring onions and kimchi on the side.

Roasted pork ribs with potatoes

Take 300 gr of pork ribs, add three garlic cloves, salt and let it cook overnight. 
Put in the oven the same way you did the other two and cook the potatoes as you did with the sweet potatoes. Serve with rustic bread and spinach salad.
