Superbowl Night: Chicken two ways

It’s Superbowl night! Let’s watch the game and eat some chicken. Here you have a couple of recipes you can do with a whole chicken.

Peanut chicken fingers with sriracha cocktail sauce

Ingredients:

Chicken breasts (from the whole chicken)

3 garlic cloves

Salt, black pepper and grated nutmeg

Breadcrumbs

Raw peanuts
For the shriracha cocktail sauce:

1 egg

300 ml soft olive oil

The juice of 1/2 lemon.

1 garlic clove

30 gr ketchup

30 gr sriracha sauce

1 splash of worcestershire sauce

1 splash of sherry

1 tsp concentrated tomato purée

Method:

Mince the chicken breasts in a food processor with the garlic.

Add the spices and salt.

Chop the peanuts with a knife or in the food processor.

Make sausages with the minced chicken.

Mix the peanuts with breadcrumbs and coat the chicken sausages.

Deep fry in vegetable oil.

For the sauce:

Use a hand blender to mix the egg and the olive oil by adding the oil little by little. Once you get the consistency of mayonnaise add the rest of the ingredients and mix until well combined.

Chicken with lemon, sage and rosemary

Ingredients:

Chicken thighs (from the whole chicken)
Chicken wings (from the whole chicken)
The juice of one lemon
Fresh sage and rosemary
Salt and olive oil


Method:

Place the chicken in a baking dish.
Add the salt, lemon juice and olive oil on top.
Cook in the oven for 30 minutes.
Add the freshherbs and some black pepper. Bake for another 30 minutes.


Serve with kimchi fried rice and lettuce salad. Have fun!
