Mr. Sandwich: Protein party in a chicken sandwich (Super easy & Super quick)

I’ve started running (again but seriously). The other day I had in mind a veggie risotto for lunch so I went for a long run to a supermarket. When I arrived, my body thought about the risotto and laughed at me. I needed meet and bread.

I am a wise woman 🙄 so I didn’t contradict my body…I know I should listen to whatever stupid decision it makes.

So I bought chicken breast fillets and bread.

When I headed home, I discovered it was not enough and started adding stuff I alrady had at home. The result is this Mr. Sandwich, that has three different sources of protein (2 of them vegan. If your body doesn’t ask for meat, simply change the chicken for tempeh)

Ingredients:

Chicken breast

1 slice of bressaola (cured beef)

1/3 rd bell pepper

3 radishes

1 tbsp beetroot hummus (I used simply greek because it’s my favourite premade hummus, but if you want something pink and homemade, here’s a pink baba ganush recipe)

2 tbsp sunflower seeds

Method:

Cut the bread in order to make a sandwich (I know this was obvious, but just in case you are still drooling looking at the picture)

Use a little bit of olive oil for grilling the chicken and the red pepper.

Slice the radishes.

Spread the hummus on the top layer of the bread.

Add the ingredients one on top of the other and cover with the hummus-bread lid.
