Cold Stuffed Peppers

Ingredients

  • 3 mini peppers
  • 1 tbsp almond butter
  • 1 tbsp olive oil
  • 1 tbsp almonds (chopped)
  • 1 tsp nutritional yeast
  • 1 tsp parsley (fresh)
  • 1 clove garlic
  • 1 dash black pepper
  • 1 dash salt

Instructions

  1. Cut the top of the mini peppers and take out the seeds. Chop the leftover top and reserve.

  2. Mix everything together: the almonds, oil, almond butter, chopped peppers...

  3. Fill the mini peppers and take wherever you want.
