Vegan Gluten Free Christmas Vegetable Spread

Ingredients

Santa spread

  • 2 orange sweet potatoes (medium size)
  • 1 handful almonds (with or without skin)
  • 2 tsp smoked paprika
  • 2 tsp nutritional yeast
  • 1 garlic clove (minced)
  • 1 lime (juiced)
  • 2 tbsp olive oil (extra virgin)
  • 1 pinch salt (adjust according to your taste)
  • sprigs of fresh thyme (dry works well too)

Snow Spread

  • 2 potatoes (medium)
  • 1 leek (only white part)
  • 2 mushrooms (white, big)
  • 2 tbsp semi sun-dried tomatoes (chopped)
  • 1 handful fresh cilantro
  • 1 pinch salt (according to your taste)
  • 3 tbsp olive oil (or more if needed)
  • 1 tbsp mustard
  • 100 ml oat milk (or as much as needed for the right consistency)

To serve

  • Toasts (you can use gluten free bread or even use it as a dip for vegetables)

Instructions

Santa Spread:

  1. Steam the sweet potatoes. You can leave the skin on and peel them when they are cold (it's easier)

  2. Let them cool.

  3. Mash them in a dish.

  4. Mix with the nooch (nutritional yeast), paprika, garlic, lime and olive oil.

Snow Spread:

  1. Steam the potatoes. Same thing about peeling them.

  2. Chop the leek and mushrooms in a very small brunoise

  3. Let everything cool down.

  4. Once they are cool smash the potatoes in one dish and add the leek, the mushrooms, the chopped tomatoes, cilantro, mustard and salt.

  5. Add the olive oil.

  6. Mix well and add the oatmilk, a little bit at a time.

  7. If it's too dense, add some more olive oil, but if you start to see it's turning from white to yellow, add more oatmilk.

To serve:

  1. Make canapés woth each of them. Choose different types of bread to make it more fun.

  2. On top of the Santa Spread add some chopped almonds and thyme.

  3. On top of the Snow Spread add some more chopped tomato and a leave of fresh cilantro.
