Christmas is definitely all around us. I mean, it almost seems it has already passed. But it hasn’t.

I bring you good news. I have the perfect recipe in case you have to go to somebody else’s house but also if you are the host and cooking. It’s as easy as it gets.
 
Vegan Christmas Recipe Vegetable Spread
 
This side dish, or better…appetizer, is healthy, light and very easy to do. It’s actually two different recipes. It’s not your typical food for Christmas and, of course, it’s packed with nutrients.

One thing that really bothers me about Christmas dinners is that it seems an excuse for people to eat all the fatty, heavy food they never eat. I mean, I don’t really want to be feeling heavy after a dinner with the family. It doesn’t make any sense to me.

Then I thought the best way to start would be the beginning. What is a Christmas table without some fancy spreads? These I’ve prepared are vegetable based, you won’t feel so full afterwards (in a “I need to go to sleep” kind of way).

The Snow Spread is made from potato, the Santa Spread base ingredient is sweet potato. It is also a cheap recipe, which comes in handy when you have to cook for a bunch.

I was gladgly surprised when I made more than enough for the recipe and was craving more and more afterwards. That is a victory for a recipe developer, it means it’s good 🙂

If you have to choose and only cook one, I’d go for the Santa Spread. It looks fancier for Christmas.

A tip I would give you, don’t let them dry out. Specially the one made from potato, which tends to dry easily. If you make it in advance, use a lid to cover it up. Take it out, add some olive oil and stir well right before serving.

Another good tip would be serving it with a little bit of mayo on the bottom of the toast or a tiny dollop on top (vegan or regular mayo, the one you usually make or buy).

I made these vegan and gluten-free so you can choose your own bread. In case you follow a certain diet or some of the guests do. You never know who would eat what and this way you can rest assured everyone will be able to try it.

I’m a festive kind of gal and I am waiting to celebrate Christmas this year. I’ve already started and I’m surely having a great time. Canapés and spreads are good to celebrate New Years eve too. Bite-size is always a win-win.

I am also looking forward to reflect on this 2021 and see what 2022 is going to bring me. I love me a good ritual and I’m really digging celebrating this new year that is coming up in a different way than I used to.

Vegan Gluten Free Christmas Vegetable Spread

Ingredients

Santa spread

  • 2 orange sweet potatoes (medium size)
  • 1 handful almonds (with or without skin)
  • 2 tsp smoked paprika
  • 2 tsp nutritional yeast
  • 1 garlic clove (minced)
  • 1 lime (juiced)
  • 2 tbsp olive oil (extra virgin)
  • 1 pinch salt (adjust according to your taste)
  • sprigs of fresh thyme (dry works well too)

Snow Spread

  • 2 potatoes (medium)
  • 1 leek (only white part)
  • 2 mushrooms (white, big)
  • 2 tbsp semi sun-dried tomatoes (chopped)
  • 1 handful fresh cilantro
  • 1 pinch salt (according to your taste)
  • 3 tbsp olive oil (or more if needed)
  • 1 tbsp mustard
  • 100 ml oat milk (or as much as needed for the right consistency)

To serve

  • Toasts (you can use gluten free bread or even use it as a dip for vegetables)

Instructions

Santa Spread:

  1. Steam the sweet potatoes. You can leave the skin on and peel them when they are cold (it's easier)

  2. Let them cool.

  3. Mash them in a dish.

  4. Mix with the nooch (nutritional yeast), paprika, garlic, lime and olive oil.

Snow Spread:

  1. Steam the potatoes. Same thing about peeling them.

  2. Chop the leek and mushrooms in a very small brunoise

  3. Let everything cool down.

  4. Once they are cool smash the potatoes in one dish and add the leek, the mushrooms, the chopped tomatoes, cilantro, mustard and salt.

  5. Add the olive oil.

  6. Mix well and add the oatmilk, a little bit at a time.

  7. If it's too dense, add some more olive oil, but if you start to see it's turning from white to yellow, add more oatmilk.

To serve:

  1. Make canapés woth each of them. Choose different types of bread to make it more fun.

  2. On top of the Santa Spread add some chopped almonds and thyme.

  3. On top of the Snow Spread add some more chopped tomato and a leave of fresh cilantro.
