Prepare in a pan with a little bit of olive oil on the base to help you toss them.
Serve stacked with a dollop of cottage cheese, some maple syrup and goji berries.
You can make this vegan by using vegan cheese and vegan eggs. The resukt would be almost the same.
You can use honey instead of maple syrup and any other fruit intead of gojis.
A squeeze of lime juice at the very end works well. Actually, the cheese is there because of it's richness and acidity, but any plant-based yogurt that is tart can be used as well.
