Healthy Rice Bowl (Poke style)

I made a non-raw Poke bowl the other day. It’s very comforting, and although everything was cooked and then cool, it felt very warming.

Ingredients:

1 cup of brown rice cooked

1/2 sweet potato

2 radishes

1 mackerel fillet or 1/2 cup of tofu in cubes

1 tsp soy sauce

1 tsp mirin

1/2 corn on the cob

1/2 avocado mashed with lemon juice, sea salt and black pepper

1 tsp nut butter (I used cashew)

Lime wedges


Method:

Marinate the fish (or tofu if you are vegan and gluten-free) with the soy sauce and the mirin.

Cook after 30 minutes in the marinade.

Let it cool.

Roast the sweet potato and the corn and let them cool.

Place the rice on the botom.

Then garnish as you wish with the veggies and fish/tofu

Place the nut butter on top of the sweet potato and the lime wedges nearby.
