Banana Spaceships |vegan · plant-based | gluten-free · soy-free

I love this dessert. The good thing about it is that it is so energetic and so healthy that it makes a perfect breakfast, afternoon snack, dessert after lunch…you name it!

The base is simple: bananas, peanut butter and cacao nibs. That’s it…the rest is up to your imagination.

A couple of weeks ago, Lucía (a friend) and I decided that the best way to keep in touch was to meet for breakfast on Sundays. And I must say, we are both enjoying our Sunday breakfast club.

Each time, we choose a place to have breakfast nearby and we meet for a couple of hours to talk about our life, our work, food and anything that comes between those things. Our chats have become more and more interesting and we talk about the mind, the universe, spirituality and many other things.

I must say, our plan to spice things up in Summer and eat breakfast outside is becoming my favourite thing. So today, I’m writing this before I meet her at the beach with this delicious bananas 🥰

Banana Spaceships

A delicious dessert with no added sugar. Suitable for most diets and lifestyles 🙂

Ingredients

  • 1 banana
  • 1 tsp peanut butter
  • 1/2 tsp tahini
  • 1 tsp cacao nibs
  • 1 tsp hemp seeds (dehulled)
  • 4 raspberries
  • some fresh leaves (mint, verbena...)

Instructions

  1. Open the banana peel, without cutting it.

  2. Mash the banana a little to leave room for the resto of the ingredients.

  3. Add the peanut butter and tahini first.

  4. Top with the seeds.

  5. Decorate with the raspberries and the mint and verbena leaves.
