VIDEO: My first courgette in the garden + Vegan Recipe

I started growing vegetables in my garden this year. I’ve never had the green thumb, but lately I feel like I’m better at growing my own food. Maybe it’s because I really enjoy cooking it 🙂

In this video I uploaded to Youtube, you’ll see my first attempts on growing courgettes (aka zucchinis) Someone told me they are the easiest to grow, and I can confirm that.

Courgette with Purple Beans and Quinoa

Fresh from the garden recipe with a very simple tahini dressing

Ingredients

  • 1 courgette
  • 1 handful purple beans
  • 1 handful young radish beans
  • 3 leaves kale
  • 1 cup quinoa (cooked)

Tahini dressing

  • 1 tbsp tahini
  • 1 tbsp nooch
  • 1 tsp olive oil
  • 1 pinch black pepper
  • 1 pinch salt
  • sliced onion
  • 1 pinch sumac (optional)
  • 1/2 lemon (juice)
  • water

Instructions

  1. Sitr fry the veggies separately

  2. Serve the cooked quinoa in a bowl, and serve with the veggies.

  3. Mix everything for the tahini dressing

  4. Pour the tahini dressing on top of everything

Recipe Notes

You can replace the radish beans for regular round beans.

Purble beans taste like round green beans, so use green beans if you wish 🙂
