Do you like ice-cream? Do you like cakes and sponges? Do you like chocolate? Well, then you’ll like this recipe. I don’t usually eat any processed food, but my body needs some “bad stuff” every now and then to feel a little bit more human 😅

The recipe I bring you today is for those who love dessert and can’t say no to processed foods like ice-cream or sponge cake. I am bringing you those two things combined, but I’m adding some good stuff to them. Why? Because when you think about healthy food, sometimes your mindset is not capable of letting you know there’s some days when you want processed foods. Well, my tip is: at the beginning, give your body some processed foods if you’re desperate for them (or not that desperate, actually) but add some nice healthy stuff on top. Make the ice-cream the garnish instead of the main dish…do you get where I’m going to? Adding fruit is the easiest way, but elaborate a bit and think about what your body wants. It might be peanut butter or maybe cacao, just try to ask your body what it really needs.

Vegan ice-cream with fruit and sponge cake

An easy way to add good stuff to processed foods

Ingredients

  • 1 tbsp vegan ice-cream
  • 15 gr sponge cake
  • 1/2 cup raspberries (frozen)
  • 1 tsp hemp seeds
  • 1 tsp cacao nibs

Instructions

  1. Take the spoonful of ice cream and serve it in a bowl

  2. Heat the raspberies until they become a dense "coulis"

  3. Add the sponge to the bowl and the raspberry puree

  4. Top with the hemp and cacao

Recipe Notes

Instead of raspberries choose any other berry, like blueberries.

Tips for making this dish healthy:

Use frozen coconut milk instead of ice-cream or frozen banana purée.

Make the sponge yourself without refined sugars or refined oils.
