Whenever I’m lazy for breakfast I think…Avocado Toast. The same happens at lunch and…guess what’s for dinner? I usually have a meal plan for the week, but if everything goes wrong…Avocado Toast.

I’ve made so many different versions of the so-called Avocado Toast that I just go with the flow. Lately I’ve been doing this recipe, but who knows what tomorrow brings. I’ve started calling them avotoasts. So, from now on, avotoasts it is.

The base is always the same…half an avocado per slice of bread. Depending on the size of both ingredients, you may need to adjust. Nonetheless, I love that uncertainy: will the bread hold? And that leads to the second step…always roast the bread or use a firm slice of un-roasted bread (i.e. fermented bread, Galician bread…)

I missed protein in the toasts and that’s why I sarted adding tahini. Even though I used hemp seeds before, I thought they needed an extra dose of protein and that made them even tastier.

Avocado Toast

Avocado Toast with an extra pinch of protein

Ingredients

  • 1 avocado
  • 2 slices of bread (gluten-free)
  • 1 tbsp tahini
  • 1 tbsp hemp seeds
  • 1 tsp olive oil
  • 1 dash salt
  • 1 dash black pepper
  • 1 dash sumac
  • 1 dash smoked paprika
  • fresh thyme
  • 1/2 lime (juice)
  • 1 tsp nooch

Instructions

  1. Make toasts, I don't have a toaster so I usually use the oven or a pan.

  2. Place half of the avocado (pitted and without skin) on top of the toast.

  3. Smash with a fork.

  4. Add the tahini and then the hemp seeds.

  5. Add the spices and salt on top.

  6. Sprinkle some olive oil and lime juice, finish it with some fresh thyme.

Recipe Notes

If you don’t have fresh thyme, use any other herb that you have on hand. If you don’t have any you can add dried thyme, but the purpose of the herb is the freshness, so I’d rather go for cilantro, parsley or even rosemary intead of a dry herb.
